Today I made Pad Kee Mao, from Thailand. I know that Pad Thai is probably the first dish from Thailand that pops into your mind... and I love pad thai... but I've made that before, and I wanted to try something new. Plus pad kee mao is my absolute favorite thing to order at my favorite restaurant Thai Country. This is probably one of my absolute favorite foods in the world. Anytime somebody wants to go out to lunch or dinner with me, I always say that we should try somewhere new... but when it comes down to it, I just want to go to Thai Country. And I always plan on trying something new... but I always, without fail, somehow end up with pad kee mao. Mine ended up tasting more pad thai-ish than the pad kee mao at Thai Country... but it still tasted good. :) However, I may need to make it a couple more times before I can make it as good as Thai Country!
Ingredients:
*Wide rice noodles. (I couldn't find any, and I didn't want to make a special trip to the asian food store just for noodles... So I just used the thin rice noodles that you can get at Winco.)
*1 Red peppers
*1 Green peppers
*1 Onion
*Ginger
*Garlic (Sadly, I had hardly any garlic...)
*1 cans of bamboo shoots
*Basil
*Eggs (3-5)
*1 serano pepper. (Be careful cutting this! It gets spiciness on your fingers, and will absolutely kill if you touch your eyes! ...Trust me... I know...)
*Soy sauce
*Oyster/ fish sauce (Optional... some recipes call for this, but some don't. I used it, but if we hadn't already had it in our fridge I probably wouldn't have spent 3 bucks on it just to use for this...)
*Brown sugar.
*Lemons or limes.
*Salt
*Chicken (Or whatever kind of meat you want... of course you don't have to add meat if you don't want... This would make a really great vegan meal!)
*So first off you should get your rice noodles soaking. Fill up a big bowl with warm water and put the noodles in... It'll take about 45 minutes to 1 hour for them to be fully soaked.
Ooo... I think that I see the reflection of a tree or something in my water... :/
By the way... I was making a double batch since we had our awesome neighbors over for dinner to celebrate their daughter's birthday. :) So I doubled the above mentioned ingredients. It made enough for about 12 people.
*While your rice noodles are soaking, you should get your veggies cut up.
Oh man, I love pictures of fresh veggies on our cutting board... It is so pretty! :) So many colors... :)
*Cook up your chicken (Or other meat)
Thank you so much, mom, for cooking my chicken for me... I hate cooking meat. All that raw meat just grosses me out! Yuck... I have such a hard time telling when meat is done, so I often end up undercooking or overcooking my meat. :P
*Cook up all of your veggies in a wok. Add in a couple dashes of soy sauce and some salt. After all of your veggies are cooked up, push them off to the side and fry up some slightly beaten eggs... then mix everything all together.
*To make the sauce that goes on top of your pad kee mao, just add together about 1/2 cup of soy sauce, 2 or 3tbsp of oyster sauce, (optional) some lemon or lime juice, and about 3 tbsp. of brown sugar.
*By now your rice noodles should be ready... even if they are still a little bit hard, that is fine... They'll soften up more later. Throw everything together into your wok... your veggies, chicken, rice noodles, and sauce mix.
*Cook it up until your noodles are soft, and are brown from having soaked up all of the sauce.
*And you are done!
