Day 2.

Today's food was latkes. (Aka. Potato pancakes.) These are a delicious food from Germany. Personally, it is one of my favorite ways to eat potatoes... it is kinda like hash browns, but in a pancake shape. :)

Ingredients:

*Potatoes (duh.) I used like 15-20 small yellow potatoes, but if you use the big brown kind you would only need like 8 or so.

*1 cup flour

*1/2 cup milk

*3-4 eggs

* optional: onions, green peppers, garlic, crushed red pepper flakes... ect.


Latkes are fairly easy to make... but it does take some time to fry everything. So if you make these, be sure to give yourself some time. (If you are just making a for a couple people then it should be a breeze, though!) I probably made about 30 with this recipe...

*first off, you have to grate your potatoes. The potatoes that I used were on the verge of going bad... they were starting to get squishy and grow eyes. (Ew.) But it still tasted fine which is the important part! :)

*The next part is really optional... I cooked up some garlic and green peppers just for extra measure. If we had an onion I would have done that as well... buuut we didn't. I also threw in a little bit of crushed red pepper flakes, cause I like my food to be a little bit spicy. It added a really subtle, and nice flavor. I didn't let the green pepper sautee until they were soft... they were still slightly crunchy. I just kinda let the flavor out a bit.



*Combine all the ingredients: shredded potato, veggies, eggs, milk, and flour. plus about a tsp. of salt, and some pepper.



*Note: when I cook, I do everything kinda loosey-goosey. So my measurements are not super exact. You may need to add an extra egg or two, and maybe a bit more flour as well... you want your mixture to be able to hold together in a pancake shape. If it doesn't hold together, try playing around with it a bit to get it more sticky-together-y. (Yeah, I know that's not a word.) Don't add more milk... otherwise it'll get waaaay too liquidy.

*Heat up a pan to medium-high. Add about a tsp. of oil. (I used olive oil.) Now you can shape your pancakes, try to squeeze out some of the liquid before frying it.

I tried using this awesome frying thing... but it didn't work so great for the latkes.




So I switched over to the stove top where things went much smoother!



*You'll need to add some more oil to the pan after every latke. And by the time you get to the bottom of your latke batter (or whatever you call it) it'll be pretty liquidy... that's totally fine, and normal. :)

*And now you are done! :) Eat, and enjoy. It is really good with applesauce... but we didn't have any, so we ate it with bacon. (Which was good, too!)


I am surprised that I was able to stack it so high without it toppling over!
