Day 6

Today I made a Jamaican shrimp curry. (Which, obviously, is from Jamaica!) Fun fact: today would have been Bob Marley's 70th birthday if he was still alive! It was totally random that I ended up making food from Jamaica on the birthday of one of the most famous Jamaicans of all time! Anyhow, I loved this dish... It had some nice heat to it, which blended really well with everything. For the yumminess of this dish, it was surprisingly easy to make! Oh, and today my brother, Elisha, helped me with dinner... Lish likes to pretend that he is a professional chef, and that he is on a cooking show. He also like to improvise... he comes up with very... ummm...unique... combinations.

Ingredients:

*rice. I used jasmine.

*1lb shrimp

*2 green peppers

*1 onion

*garlic

*thyme

*lemon juice

*1 cup (or more) of milk

*2tbsp flour

*tabasco sauce

*spices: curry powder, ginger, paprika, cajun seasoning, salt, pepper, crushed red peppers... ect. (Elisha added nutmeg, just because.)

Prep:

*Ok, so first get your rice cooking. It will only take you about 20 or 30 minutes for the curry, so you'll want to be cooking the rice while you are working on everything else.

*Chop up all your veggies. I cut my green peppers into kind of longish slices. When you cut your vegetables into long slices, it is called "julienne." I just learned this today. :)

Green peppers, onions, garlic, thyme. Ocra would have been nice, too...

*Next toss your shrimp with about a tsp. cajun spice and curry powder. and 1/2 tsp. salt and pepper.

Here is the tossed shrimp. Don't forget to make sure that it is de-veined!

And here is Elisha with his masterpiece. (raw shrimp mixed with a couple of spices...!)

*Sautee your veggies and then add all of your spices... you can choose how much of everything you want to add in... I like my food pretty spicy, so I added an extra dash of everything spicy! You can also add some lemon juice if you want.

*Once everything is sauteed and mixed together, add your milk and let it simmer a little bit. Then add the flour to the mixture to thicken it.

*Hot sauce!!! yummm...... :)

*Now you can add your shrimp mixture to your curry. I love shrimp because it is soooo easy to cook! Just let it cook in the curry for about 3 minutes or so, and it is done! (The shrimp should be pink, and firm when it is done.)

And you are done!

Enjoy! Oh, yeah... one other thing that Elisha added was brown sugar... haha. :)
Anyhow, I really enjoyed this dish, and would definitely make it again! It was super easy to make, and you could even add chicken instead of shrimp and it would be just as good! :) (But the shrimp makes it more authentic in my opinion.) Thanks for reading!
